The dishes, cuisines and drink culture the city actually owns — tap one to see my list for it.
Pie, mash and liquor
The East End dish that predates everything fashionable near it: minced beef pie, mash, and a green parsley liquor made from the eel stock. The surviving shops are a working tradition, not a revival.

Invented here, at The Eagle in Farringdon in 1991, and now a global format. London is where you judge whether a pub kitchen is doing the thing properly or wearing the label.

Most of Britain's curry houses trace to Sylhet, and Brick Lane is the street it happened on. The dividing line is between the tourist strip and the kitchens actually cooking Bangladeshi food.

The greasy spoon as a London institution: formica, mugs of tea, a fry-up cooked by someone who has done it for thirty years. Disappearing fast, which is the reason to record it.
