Joshua van den Berg cooks the whole line alone, for a dining room of about twenty-five, in what used to be a ground-floor apartment on East 7th. He trained at Bern's Steak House and cooked at Momofuku's Má Pêche, Paul Liebrandt's The Elm and the Michelin-starred Aldea, then at Bunker in Bangkok, and he won a season of Chopped. Joe Pannenbacker opened the room as a wine bar in 2018 with no sign on the door. There are over 400 labels in the cellar and you can buy any of them at shop price on the way out.

Why go

Pannenbacker is a self-taught sommelier who played in Austin rock groups, Think No Think among them, and what he wanted was a friend's living room.25 Moira Muldoon wrote it up for Austin Monthly a few months after it opened. The bar area was built to look like a kitchen and there were couches instead of banquettes. A washer and dryer sat on site so the staff could put cloth hand towels through at the start of a shift.5 The food has since caught up with the wine. Pannenbacker told Edible Austin how it happened.
