Bamboo House Austin
The Peking duck lands on a bamboo platter with hoisin, plum sauce, cucumbers, green onions, brown sugar and a bowl of duck broth to sip between bites.2 There is a lunch drop and a dinner drop, and when they are gone they are gone.2
Why go
Half a duck goes to a party of three or under and a whole duck to six or under. Neither leaves the building, and the restaurant says that holds until the city grants a permit to expand the kitchen.3 That is a room cooking at the edge of its equipment, and Nicolai McCrary says why: unlike in Houston, production is a little more limited here, meaning peking ducks are only available for dine-in, and quantities are limited (with both a lunch and a dinner drop).
2 The original is a Houston-area restaurant that went viral in 2019 when the Houston Chronicle called its Peking duck the best in that city, under chef-owner Lianzhuo Chu.1 Chef William Chu runs the menu here on fu he wei, the Sichuan grammar of compound flavors, and the restaurant counts its own: 24 combinations, seven spicy and seventeen mild.3 The through-line is jiaoyanweixing, roasted Sichuan pepper cut with salt, which is why the numbing note turns up in dishes that are not hot.3
Order this / avoid
- Order the Peking duck, and size the table to the bird.
The fat is perfectly rendered through on every slice, with skin crispy enough to register an audible crunch.
It arrives with thin flour pancakes, which read the crisp skin better than the steamed buns this dish often comes with.2 - Also: the breaded lobster. One order is two whole lobsters, cut into shell-on segments, lightly breaded, deep fried and seasoned with salt and pepper under a mound of crisp breading. McCrary calls it one of his favorite lobster dishes in town.2
- Then: mapo tofu and the mala chicken, which the menu lists as spicy and crispy chicken.2
- Avoid: planning to take duck home. There is no takeout on it.3

CultureMap Houston reported in 2019 that people were driving to Humble for it after the Houston Chronicle named its Peking duck the city's best.1

the loud 'oohs' and 'ahhs' of everyone who managed to secure a duck.

Verdict
should-visit — Book it, and count your party before you order. Three people get a half bird and six get a whole one, so this is a night to round up rather than pare down. Bring beer from the shop next door and drink it cold against the pepper. If you are two people, skip the duck entirely and put the money into the lobster and the mapo tofu.
