Why go
Chuck Charnichart, Haley Conlin and Alexis Tovias worked the pits at Franklin Barbecue together.1 Charnichart went on to Way Down South in Oslo. She consulted on barbecue in Egypt, then settled at Goldee's in Fort Worth. Conlin took Lane Milne's smoker shift at Micklethwait when he left. They opened here in May 2023, Saturdays only, and none of them had run a joint before. Charnichart wanted lime acidity in the rib glaze. Juice died in the smoke, so chef Aurora Rodriguez told her to grate zest instead. That is the Molotov rib.1 The green spaghetti is her mother Francisca's recipe. Poblanos, jalapenos and cilantro go into a puree of creamed cheese, sour cream and milk. Charnichart and Tovias grew up on it at backyard barbecues in Brownsville. Tovias sold homemade salsa for a stretch and still makes the salsa verde here. The corn tortillas run on masa bought from Nixta Taqueria in Austin.1

It's our mac and cheese

- Avoid: a weekday drive. It trades Saturday and Sunday, and it stops when the meat runs out.3

Good to know
- Two days a week, and a queue. Saturday and Sunday, until sold out. Daniel Vaughn arrived an hour before the doors and was second in line; by the time he got in the queue was near the block.1
- The other pits are a walk away. The door is on the courthouse square, with Smitty's Market a block away and Black's Barbecue a couple of blocks north.1
- The room does not look like its neighbors. Pink accents and cartoon decor where the older pits have smoke-blackened walls, and the name nods to Nicki Minaj's fanbase. Making a barbecue joint where everyone felt welcome was the founders' stated aim.31
- The prices here are 2023 and 2025 vintage and were not re-checked, because the venue's own site sells merchandise and publishes no menu.6
- Hygiene: Austin Public Health has no jurisdiction here, which is a different statement from no record. The Census geocoder places this address in Caldwell County, outside the agency's reach, so an absent inspection says nothing about the kitchen.5

Verdict
must-visit — Preorders open more than a week out, and that is the only way to beat the queue. Nothing else here is bookable. Start a Lockhart day here, because the serrano-and-lime rib is the thing the rest of the square does not have. If a pure salt-and-pepper tray is what you want, walk up to Black's.
