Why go
The truck parks outside Radio Coffee and Beer on Menchaca. Every sandwich starts from a biscuit. Smoked meat and fruit jam go on top.2 Christopher McGhee and Will Spence have run oak through an offset here since 2021. They build the biscuit sturdy enough to hold barbecue.1 The namesake pairs moist peppery brisket with smoked strawberry jelly. They put spiced apple-pear preserves on the pork belly, and a jalapeno-habanero jelly on the sausage link. That last one eats lightest of the three despite the snap.2

- Order brisket and jelly first. Thick buttery biscuit, peppery brisket, smoked strawberry jelly doing the moisture and the sweetness.2
- Also: pork belly with spiced apple-pear preserves, or the sausage with jalapeno-habanero jelly.2
- If jam on meat is a bridge too far: chopped brisket with barbecue sauce and cheese, no jelly.2

Sure, you can order a meat plate at Briscuits, and it will be delightful, but here the sandwiches are king.
He picks the blueberry-Gouda sausage with a hint of thyme under smoked blueberry jam, the brisket-egg-cheddar biscuit, the turkey special with truffle mayo, and the pork belly burnt ends under a jalapeno glaze.1 - That is a place on the list and not a number. Only the top ten of the 2025 Top 50 are ranked; the other forty run alphabetically by city, and Briscuits sits in the Austin group. The list runs every four years, and Vaughn built it from 319 joints visited unannounced in late 2024, revisiting the contenders himself.1

The outlet also carries it on its Austin breakfast sandwiches guide.2 - MICHELIN Bib Gourmand, awarded in the inaugural Texas guide of November 2024 and held in the 2025 selection. There is no 2026 Texas edition, so that is where the standing sits.4
Good to know
- Thursday to Saturday now, and Sunday is off it. The truck posted temporary summer hours that drop Sunday service and start later in the morning than Texas Monthly recorded in 2025; check the truck's own page before a Sunday drive, and there is still no phone.5
- Ask about the cinnamon roll. When it is on special, Texas Monthly's tip is the inside-out smoked cream cheese version.1
- It is a trailer, and that decides the hygiene line. Briscuits trades from a truck parked outside Radio Coffee and Beer, and Austin Public Health covers fixed food establishments only, so no public score exists and none is implied about the kitchen.3
- The host does have a score. Radio Coffee and Beer at the same address scored 94 on 22 March 2024, on the coffee bar's own permit. That number does not transfer to the truck.3
- Address spelling. The city writes Menchaca Rd and The Infatuation writes Manchaca Rd. Same street, renamed.3

Verdict
should-visit — Walk up to the window on one of the four days it trades. Order one sandwich and one sausage between two people and eat them at Radio. Ask what the special jam is before you choose the meat, because the fruit is the variable here and the brisket is the constant. Skip the meat plate, since the whole idea of the place is the sandwich.
