Canje
Tavel Bristol-Joseph cooked pastry for Emmer & Rye and Hestia for years before he opened the room where he cooks Guyana.8 Matthew Odam gave it 9 out of 10 and the wild boar pepperpot, thick with cassareep, is what you build the order around.6
Why go
Bristol-Joseph moved to Austin in 2015 to help Kevin Fink open Emmer & Rye, went looking for plantains and jerk chicken, and found two food trucks. He told the Robb Report what that did: Subconsciously, that made me feel like I, my culture, wasn't part of the community. I had this emptiness in a sense. The food that I know is not on the level, is not given the same respect as other cuisines.
8 Canje opened on East Sixth in October 2021, and Bristol-Joseph calls the menu his own interpretation of his home country's cooking, a mashup he traces to Africa, India, Europe, East Asia and Indigenous cultures.6 The pepperpot is the proof. Cassareep, the bittersweet cassava reduction that turns the stew dark, is started by Bristol-Joseph's uncle in Guyana and finished here.7 Kevin Fink told Odam that a dish does not go on this menu unless it has a story behind it.6

The rich, buttery roti – basically, a laminated flatbread – was the perfect tool to sop up the luscious sauces from both entrees.

, and the magazine's Global Advisory Board does the ranking.3 - James Beard Foundation: Tavel Bristol-Joseph, semifinalist for Best Chef: Texas in 2024 and for Emerging Chef in 2025, both for Canje, neither advancing to the finals. The foundation's own 2025 page files the second under Emerging Chef and KUT reported it as Outstanding Chef, and that disagreement is unresolved.10
Good to know
- The menu is built to share and it arrives in four sections, Wah Gwaan, Suppa, Tryating and Likkle Muore. Staff ask for the whole savory order up front so the kitchen can course it.7
- Odam put a meal at $50 a head before drinks in June 2022, which is the only figure anybody has published and it is four years old.6
- Beer drinkers get the short end. Haupt:
Canje has a respectable wine list and, to the dismay of my beer-loving partner, a very small beer list.

- Where: 1914 E 6th St, Suite C, in the Holly neighborhood. Counter Cafe is Suite A in the same building.4
- Hygiene: Austin Public Health scored the kitchen 90 on 10 February 2026, and 92, 91, 87 and 86 before that, back to 2023. Nothing there is a finding.5

Verdict
must-visit — The suppa section is where the kitchen's real work is, and a table of four gets across enough of it. The pepperpot is the dish to build the order around and the roti is what you eat it with. Odam and Haupt both ate here in 2022 and neither has been back in print, so the menu you get will not be the menu they describe.
