Ensenada ATX

Ensenada is the second-largest port in Mexico and the place fish tacos come from. Stephanie Everett Martin grew up there, moved to Austin with her Texan husband, and could not find one. She and her mother Liz Everett opened an orange trailer in June 2022 to fix that. The orange is the color of the Mercado Negro, the seafood market back home. The whole thing turns on the batter, light and crunchy enough that the Chronicle put it beside eating one in Ensenada.

Martin and Everett spent much of the pandemic back in Baja, and by the end of it they had decided to open.3 The truck started on East Martin Luther King Jr. Boulevard and had moved to the Arbor Food Park on East 12th by early 2023.32 The orange is a reference to the Mercado Negro, the seafood market in Ensenada.3 Evan Rodriguez, writing for the Chronicle, put the whole method in one sentence: Herein lies the secret to Ensenada-style fish tacos: It's all about the batter, which is light and incredibly crunchy, reminiscent of tempura.2 Chris Hughes at Austin Monthly reported the same batter as dairy-free, crackly on the outside and pillowy in the middle.   • Order: the cod taco. Matthew Odam ranked it thirteenth among the city's twenty best tacos in May 2025 and described it as plump fried cod finished as light as a tempura shell under a latticework of cabbage crunch and a zag of tangy mayo.1
  • Then the Taco Gobernador, sauteed shrimp and melted Oaxaca cheese, with salsa macha under it to hold the sweetness down.1
  • On a weekend, the tostada de ceviche and the cóctel de camarón. Stephanie Martin says to add the avocado.2

should-visit — Three Austin writers reviewed this trailer and all three spent their paragraph on the batter, which is what a kitchen looks like when it has made one decision and stuck to it.
