Why go
Esquire named fourteen bars to The Best Bars in America in 2026. This was the only one in Texas.1 Co-founder Dragan Milivojevic made Omar Mamoon a clarified drink he could not forget. The bar's own page adds the part a national list will not tell you: Konbini, a sushi bar, now trades inside it on identical hours.12
Order this / avoid
- The Papercut, which is the bar's own name in a glass: Rosaluna mezcal, tangerine liqueur, Aperol, pomegranate, pineapple and lemon, chilled in a CO2 machine.1
- Avoid: a Sunday or a Monday if you want to eat. The food menu runs Wednesday through Saturday, and Tuesday is dark.2
What locals & experts say
- Omar Mamoon wrote the Esquire entry, reported by CultureMap Austin in June 2026. His line on the house drink is
like if a Paper Plane and a Naked & Famous had a boozy baby
. Esquire's is the only outside judgment on this bar.1 - I have not found an Austin outlet that has written about it, at the Statesman, the Chronicle or Eater. So the weight here is a national magazine's.
Good to know
- Booking: none. The bar's own page says walk-ins only.2
- Where it is: East Austin, on Fifth Street, per the bar's own site.2 The number usually printed for the door is 908 E 5th St, which comes from the Konbini opening coverage.
- Two bars, one door: Konbini opened inside papercut in mid-November 2025, from Danielle Martinez and Michael Carranza of Tare, and keeps the same hours.2
- Hygiene: Austin Public Health publishes inspection scores for fixed food establishments and holds no record for this bar under any name or address I tried. That is an absence and not a pass.3
