Ros Niyom Thai
AJ Thongprayoon spent three years flying back from San Francisco to eat Thai food across Texas. Then he picked Round Rock. He opened on the I-35 feeder road in September 2018 and cooks the food of central Thailand. The last page of chef's specials is where the whole fried fish lives.
Why go
Thongprayoon was born in central Thailand and learned to cook in San Francisco restaurants before he moved to Central Texas in 2017.4 What he built is short by design. Matthew Odam, the Statesman's restaurant critic, made that the point of his 2025 write-up: Ros Niyom Thai doesn't overwhelm with the kind of encyclopedic menu you might find elsewhere. There's a multitude of offerings, but they feel considered and intentional.
1 The curries run red, yellow and green, with grilled skewers and stir-fried noodles like pad see yew beside them.1 Around those sit the dishes Odam thinks make the place: crab cakes stuffed with water chestnuts, a hot and sour soup fattened with braised pork ribs, and a chef's-specials page built on steaming and frying whole fish.1 The tom yum goong comes out with a creamy broth, and Thongprayoon says that is a regional fact rather than a house style: In Thailand, you have east, south, north, west and middle. I am from the middle part of Thailand. That's why we have the creamy broth.

Order this / avoid
- Order the flounder first, the duck curry second. That is Odam's own order. The fried flounder comes
accompanied with a shredded mango, lime and fish sauce.

4 - Avoid: ordering by heat number and hoping. Thongprayoon says he remakes a dish the moment a guest tells him it is too hot, so say what you want instead.4

Verdict
should-visit — Odam's whole point is that the menu is short on purpose, and the kitchen spends the room that buys on frying whole fish to order. Pick the fish first and let the floor build the rest of the table around it. Everything else on the list is competent Thai food you could get closer to home.
