Sorn
In the Michelin Guide Thailand 2025, Sorn became the first Thai restaurant in the world to hold three Michelin stars, and it kept them in the 2026 guide, one of two three-star rooms in the country alongside Suhring.
Why go
Chef-owner Supaksorn "Ice" Jongsiri is self-taught, from Nakhon Si Thammarat, cooking the food of his paternal grandmother. Before opening on Sukhumvit 26 in 2018 he spent two years traveling all 14 southern provinces, learning from farmers, fishermen, foragers, and long-running local eateries, and that network now supplies the kitchen directly (venue site). The stars followed fast: one in the 2019 guide, two from 2020 through 2024, three from 2025, per the Bangkok Post. Asia's 50 Best ranks it No.12 in 2026 and describes the cooking as "genre-bending, spice-saturated southern Thai gastronomy"; the same editorial calls it "allegedly the most difficult restaurant to book in Thailand" (ref).
Order this / avoid
- Order: there is one seasonal tasting menu, B7,800 before service and tax on the official booking page. The fixed point is Kan Chu Piang, the "Gems on Crab Stick": chilled blue swimmer crab leg coated in roe with a yellow-chili dip. Time Out on the crab work: "It's a masterclass in technique, with jumbo pieces of crab meat roasted in the shell for extra aroma." The crab curry runs as a special addition when offered.
- Avoid: waiting on the booking. Seats for each month release on the 15th (email, international guests) and the 25th (TableCheck) of the prior month, and deposits are strictly non-refundable, so lock the date before the flights.

must-visit — The world's first Thai restaurant with three Michelin stars, held into the 2026 guide, ranked No.12 in Asia and No.17 in the world in 2025. A self-taught chef spent two years across all 14 southern provinces building a supply chain no other kitchen has, and the result reads as southern Thai heat at three-star precision rather than French plating with Thai garnish. Booking is the constraint, exactly as Jeff's note says; the monthly release windows make it plannable.
