Fournée Bakery
Baguettes, levain sold by the section, walnut and sunflower rye, and canelés on the pastry shelf. Frank Sally taught at the San Francisco Baking Institute before this became his first shop.
Why go
The name is the unit of work. Berkeleyside glossed it on opening day: a fournée is what comes out of the oven in one bake.1 Sally opened on Domingo Avenue on 4 June 2013, opposite the Claremont, next door to Peet's, in a room with an exposed brick wall and wooden shelves for the loaves.
The block had been waiting. The Bread Garden served this corner for 39 years, and its owner David Morris told Sally the lease was going before he moved to Paso Robles.1 Berkeleyside's Tracey Taylor was there on day one and watched the raspberry scones, Ceylon sticky buns and classic baguettes run low within hours. A staffer named Marie told her: There were people outside the door at 6:45 am waiting for us to open at 7am.

- Order: bread first. On opening day the range ran
baguettes, levain, whole wheat, sunflower rye, walnut, Provençal,
with kugelhopf, gougères, canelés, Meyer lemon shortbread and noisettes on the sweet side.1 Sally said then that the fruit tarts would follow the season. - Avoid: arriving late and expecting the full shelf.

- Timing: at opening the shop ran Tuesday to Saturday 7am to 7pm and Sunday 7am to 3pm, closed Mondays. Check before a special trip; that schedule is from 2013.1

Verdict
could-visit — Tracey Taylor stood in the shop on the first morning and wrote down what was on the shelves and what a baker had done to get there, which is real reporting and not a listing. It is also the only account this page has. The date is the problem. That morning was June 2013, and I have nothing later to set beside it. The shop's own site would not load either, so I cannot tell you what is on the shelf today. The rung follows the freshness of the record.
