The Likarish brothers built this in Denison in 2014, Jonathan on production and Robert on the business, and they went to France for the method.1 Jonathan learned pot-still distillation and the elevage approach to barrel management from the brandy distiller Hubert Germain-Robin, and elevage is the part that answers the Texas problem: in scorching heat and low humidity, they watch every barrel and move each one toward its own maturation, and nobody leaves a barrel alone for a set number of years.1 Where Kentucky reaches for wheat or rye as the flavoring grain, they use different varieties of corn, which Whisky Magazine calls a pioneering method that's become one of the distillery's most celebrated hallmarks.1 The name is local history. Denison's T.V.
