Condita
A wine-marinated mussel on an edible squid-ink shell, six tables, a Michelin star on the 2026 guide, and a hygiene rating of fail from June 2026.154
Why go
The Good Food Guide describes a place you could walk past: Ambling along a suburban Edinburgh street, it would be easy to pass the local post office and entirely miss the understated former shop unit that is Condita.
1 It has operated on Salisbury Place since 2018 and still reads to the guide like a pop-up, with seasonally changing artworks and retro furnishings set over the building's plain shell. There are six tables, the menu is a fixed-price surprise, and much of what is on it comes from Condita's own walled garden in the Borders. The guide's account runs from a signature wine-marinated mussel on an edible potato-starch and squid-ink shell, through seared kohlrabi with a spiced soy glaze that was its standout, to a loin of hogget with roasted girolles, goat's curd and anchoiade. The guide's one reservation is printed too: A relatively predictable sequence of vegetable, fish and meat dishes follows
before the cheese and two desserts.1 The star was carried on the guide's own Edinburgh and county directory cards when both were reread on 4 August 2026, and Condita appears on the UK starred list published that February.2
Order this / avoid
- Order: nothing. There is no choice, and the pictogram bookmark on the table is the only clue to what is coming.1
- Avoid: booking if you need substitutions. Vegetarian and pescatarian menus are available when you book, and no changes can be made once you are eating.1
What locals & experts say
- The Good Food Guide, on the format:
With just six tables, this is an intimate encounter with food that focuses on seasonality and local production.
It picks out the kohlrabiin terms of flavour, technique and sheer prettiness on the plate,
and it describes foraging pushed to a dessert built on pineapple weed, meringue shards, nasturtium jam and umeboshi plums.1 - MICHELIN Guide (2026): one star, on both directory rolls, on The Staff Canteen's UK list and on the Scotsman's roster of the Scottish entries.3
Good to know
- Hygiene, and read this before you book: the Food Hygiene Information Scheme rating is Improvement Required, from a City of Edinburgh inspection on 30 June 2026. That is the current rating and the most recent inspection on the hygiene register as at 7 August 2026, re-checked on that date.4
- Booking: essential. Six tables.
- How long: the guide describes a three-hour experience, paced by the chefs in the front-of-house prep kitchen.
- Price: nobody publishes a figure.
- Wine: a list that goes deep on a few producers rather than wide, with a handful by the glass if you skip the flight.1
- Getting there: Salisbury Place is a residential stretch in Newington, and the frontage gives very little away.
Verdict
should-visit — A one-star tasting-menu restaurant with six tables in a converted Newington shop unit, cooking to the season with no choice on the card and much of the produce from its own walled garden in the Borders. The Good Food Guide's inspector picks out seared kohlrabi with a spiced soy glaze, bergamot and flowers as the dish that stood out for flavour, technique and looks, alongside a signature wine-marinated mussel served on an edible squid-ink shell. It is held at should-visit rather than must-visit for two reasons, both stated: the current hygiene rating is Improvement Required from June 2026, which is the single most decision-relevant fact in this file, and no source publishes a price for a three-hour surprise menu.
