The National Library of Scotland keeps the recipe books Scottish households actually cooked from, including a countess's from the 1680s and a pastry book from 1734, and anybody can read them. Membership is free, the online form takes five to ten minutes, and you then show identification at George IV Bridge and pick up the card. Ask for the manuscripts through the catalogue before you go, because staff fetch them out of storage for you. Tom Kitchin told The Relisher that Scran and Scallie has cooked old recipes found this way, so the reading room feeds a working pub menu in Stockbridge.
