Matt and Helen Carroll opened the first Fortitude on York Place in 2014, shortly after they married, and took this Hamilton Place unit in February 2020 when it was still a bike shop.1 They kept the old tiled walls and opened the room out, and the espresso machine is a Modbar with the group heads at counter level and the boiler underneath, so the sightline over the bar stays clear.1 The roasting happens on a Diedrich IR-12 at their own unit in Granton, and the beans go out to other cafes around the city as well as over this counter.2 The buying is where the long relationships show. The importer is Raw Material, the partner on the ground in Rwanda is Muharo Trading Company, and the washed lot from the Shyira station in Nyabihu is the seventh consecutive harvest they have taken from that one site.6 Matt Carroll set the standard he buys to back in 2017: We work with a small number of high quality green bean suppliers when sourcing our coffee and are proud to provide complete traceability from farm to cup.4 They tried savoury food here for a few months and then cut it, and the counter is now coffee, tea and sweet bakes.1

Order this / avoid

  • Order: espresso, so you can watch the Modbar work. The group sits on the counter and the machinery sits below it, which is why the bar reads as an open bench.
  • Order: the Shyira washed Rwanda when it is on. Red Bourbon at 1,800 to 2,000 metres, cherry collected from growers as high as 2,400, and the roaster's own tasting note is stone fruit sweetness with a sparkling citrus acidity.6
  • Order: Blend No. 1 for the everyday cup. La Palma from Colombia carries the texture, Lotecitos from Oaxaca puts the fruit on top and Kercha from Guji supplies the acidity, all off the 2025 harvest.6
  • Order: the El Carmen decaf if you are past your caffeine for the day. It is decaffeinated with ethyl acetate fermented from Colombian sugarcane, down to under 30 ppm residue, and they call it easily one of the best decaffeinated coffees we've ever tasted.6

could-visit — The craft case is real and it lives in the buying. Seven consecutive harvests off one washing station at Shyira in Nyabihu, with Raw Material named as importer and Muharo Trading Company named on the ground, is a relationship almost no two-shop operation can claim, and the house blend is published down to 50 percent La Palma, 25 percent Lotecitos and 25 percent Kercha off the 2025 harvest. They roast it themselves on a Diedrich IR-12 in Granton and other city cafes pour it, which is the scene voting with its own bar. That is depth and evolution together, and craft is the heaviest thing on the scale, so this is not a room coasting. There is also one piece of outside corroboration that the first pass of this ruling missed: the Scottish Indy Coffee Guide's team picked Fortitude as one of four Edinburgh roasters to try in 2017, printed by the Scotsman. It is a modest, nine-year-old guide pick and it lands at the moment they started roasting, so it tells you the specialist lane rated them early and nothing about the cup today. What still does not exist is anyone outside the house saying the coffee is good now. Sprudge summarizes the reputation of the cafes, no critic has published a tasted verdict, and no edition of that guide since the second has been checked. Add a 4pm close seven days a week, no food since the savoury menu was cut, and an Edinburgh specialty field that includes Lowdown and Artisan Roast, and the honest rung is if it is on your way. It usually will be, since this is Stockbridge, directly opposite Lannan and two minutes from Skua. I differ from the research log, which argues should-visit on the green buying alone. The buying is the best thing here and it is not enough on its own to send someone across a city for a cup nobody has judged in print.
