Why go
Dom Morton founded Canotto Pizza in Cathcart in 2020, watched it move out to East Kilbride in 2022, and opened Sub Rosa in January 2025 in a unit on the Enterprise Park industrial estate at the edge of Castlemilk (Glasgow Live). It is a converted prep kitchen with gingham tablecloths, Lego models and old sports memorabilia on the walls. Two doughs run: the Detroit pan bake and a round neo-Neapolitan. Morton's position on why it is worth the drive: Our whole ethos is against the cookie-cutter generic pizzas in Glasgow. We make as much as possible in-house.
Since 6 November 2025 the same kitchen has also been cooking inside Inn Deep at Kelvinbridge, which is a considerably shorter walk from the West End.
Order this / avoid
- Order: the Detroit sharer, about GBP 28 for two. David Kirkwood found the
cheese-climb frico is majestic, browned to crisp glory,
with blackened pepperoni and scorched guindilla peppers on top1. If you want the other dough, the round comes with achewy, airy, perfectly seasoned crust, with soft, milky cheese.
- Avoid: a late plan. The kitchen runs Wednesday to Sunday and stops around 8.30pm, and it is closed Monday and Tuesday.
