Why go

The Society formalised in Edinburgh in 1983 after Pip Hills bought a cask of malt and split it among friends, and it still bottles the same way: one cask at a time, labeled with a distillery code and cask number instead of a brand, then filed by flavour rather than by region. That system is the reason to drink here. You tell the staff a direction, and the room's own page counts "over 850 cask strength bottlings by the dram" to search through. The Glasgow members' room opened at 40 Bath Street in March 2020 with a food menu built by chef James Freeman around Scottish tapas, braised Scotch lamb hotpot and whisky-cured salmon, which is a longer kitchen than most whisky bars attempt. Access runs through membership, and a member can sign in up to three guests.

• Order: a dram from a flavour profile you would not normally choose, since the coding hides the distillery name and takes the brand bias out of the decision. On a Sunday, the roast chicken with trimmings, which Rosalind Erskine found came with skin salted and crispy and a Yorkshire pudding light as air.3
• Avoid: Mondays. The room closes to members that day and goes to private hire for groups of up to 120.
