Modou Diagne started at 111 by Nico as a kitchen porter in 2014 and was running the kitchen by 2017, and the restaurant he opened for himself in 2025 does not print a menu.

Why go

TRUST opened at 1132 Argyle Street on 2 July 2025, a second Glasgow site after 111 by Modou on Cleveden Road (Glasgow West End Today). Ten tables, two seatings a night, five courses that change with what the kitchen buys, and no choosing. Diagne states the deal plainly: I want people to walk through the door, let go of control, and simply enjoy what we've cooked and prepared for them in that moment. The whole thing costs GBP 30 a head, with a drinks pairing at GBP 28 if you want it. By January 2026 he had a third site, Studio Modou on Nithsdale Road, which is a useful check that this one is still running (SLTN).

Order this / avoid

• Order: there is nothing to order. If you want the full version, take the GBP 28 pairing, since a no-menu kitchen builds the drinks alongside the courses rather than against a printed list.
• Avoid: booking the 6.30pm seating and expecting to linger. The room turns for a second sitting at 8.30pm.

What locals & experts say

• Daniella Theis (Gallivant, 16 Sept 2025), who paid for her own dinner, on the first plate: the ox cheek croquette was a beautiful display of the chef's skill, and what followed paired carefully prepared centrepieces with sometimes surprising flavour combinations. She read the room as cosy, but modern, built from dark walls, red and white lighting and candlelight, with none of the stuffiness the format could carry. Her visit included a blindfolded course, which she called a fun way of trying food.3

• No registry-expert review is readable. The Scotsman's food desk covered the opening, but scotsman.com returned HTTP 403 to us on 29 July 2026, so that coverage is unread rather than absent.

• Booking: essential. Ten tables, two turns.
• Price: GBP 30 for five courses, GBP 28 for the pairing.
• Where: 1132 Argyle Street, a few doors along the Finnieston strip.
• Not the same as: the TRUST set menus served at 111 by Modou on Cleveden Road. Different address, different restaurant.
• Hygiene: the Food Hygiene Information Scheme rates the premises a Pass, inspected 16 October 2025.5

Verdict

should-visit — Modou Diagne came into the 111 kitchen as a porter in 2014, ran it as head chef by 2017, and was handed the restaurant in 2020. TRUST, which opened on 2 July 2025 on Argyle Street, is the room he built with that: ten tables, two seatings, five courses, no menu and no choice, at GBP 30 a head with a GBP 28 pairing if you want it. A kitchen that refuses to publish a menu has to buy well and cook to what it finds, and at this price that is a rare thing to be offered in Finnieston.
