Vicky Lau opened Mora on Cat Street in 2022 to build a menu on soy as milk, tofu, tofu skin and fermented beans.
Why go
Lau is the chef of Tate Dining Room. Menus at Tate built around tofu and soy sauce led her here. The Kung Wo Beancurd Factory helped with her early research. She told Tatler at the opening in 2022 what she was after: an entirely new genre of soy-based dishes.
1 She built the menu as a run of textures: We start off with something very silky, then something crunchy, then meaty, a little bouncy, then soupy.
2 The house makes its soy milk and tofu on a bean-to-pulp extractor.9 Mora won its first MICHELIN star in 2024 and held it in 2026, along with a MICHELIN Green Star for sustainability.58
The kitchen changed hands in 2026. Choi Ming-fai was head chef when Mora won its star and took the MICHELIN Young Chef Award in 2024. Kevin Chan Tak-chun has led the kitchen since Choi left early in 2026.53 The South China Morning Post's 100 Top Tables found in 2026 that Chan's team remain experts at translating soy into forms that regularly surprise even those who thought they knew the ingredient.

Tatler's July 2026 listing found the fried tilefish a highlight, its crisp skin and delicate flesh balanced by fermented tofu that brings depth without heaviness.
The signature abalone noodle in soy milk and chicken bouillon remains silky and quietly umami-rich, comforting yet composed.

Rubin Verebes of Foodie ate the lunch menu under Choi in December 2024. The deep-fried tofu in warm sesame sauce was his favorite: The warmth of the sesame sauce warmed my whole body.
His one complaint was the mushroom rice: I felt that it needed a bit more oomph to match the other dishes.

should-visit — Go to Mora for Vicky Lau's menu built from soy, and have the noodle in soy milk and chicken bouillon. Dinner was HK$980 a person plus 10 percent in August 2026. Mora won its star under Choi Ming-fai, and his successor since early 2026 is Kevin Chan Tak-chun.
