Ta Vie
Ta Vie makes its sourdough each morning from Hokkaido wheat, fermented with a wild yeast found on rice bran.
Why go
Hideaki Sato was born in Nagano in 1976 and cooked French food for more than ten years before he spent three under Seiji Yamamoto at Nihonryori RyuGin in Tokyo. He came to Hong Kong in 2012 to run Tenku RyuGin. Under him it won two MICHELIN stars within six months. In 2015 he opened Ta Vie with his wife, Hiromi Takano, who runs the drinks and the wine pairings.1 Ta Vie has held three MICHELIN stars since 2023.19 The name means your life
in French and sounds like the Japanese word for journey. Sato said of the third star: This is the harvest time of my culinary journey.

Sato cooks one tasting menu that follows the season, from ingredients that come mostly from Japan. His rule is pure, simple and seasonal.

The signature is the house pasta in seaweed butter with Hokkaido uni. Matthias Ruhl of Travels for Stars paid for dinner in 2023 and called it a seemingly simple dish that did everything right.

65 Epicurus's favorite that night was a crab course, a tart shell of socarrat (the crunchy rice from the bottom of a paella pan) filled with the innards of kegani, the horsehair crab. The socarrat tart was extremely light and fragile, while retaining a characteristic crisp and crunch you'd expect from a good paella crust, contrasting with the gooey, slightly bitter crab paste.

Not every course lands. Ruhl found the lamb fillets underwhelming
in 2023 and wrote that not everything worked all the time.
Epicurus found the rack of lamb fork tender in 2025.65 The room holds seven tables in black and white, with cocoon-like booths. Sato presents dishes at the tables himself.5 Ruhl in 2023: I have never seen a three-starred chef bus tables and explain every other dish in person.
