Oscar Amador sets five house salsas on every table at Amador Cocina Fina and refuses to tell anybody which one goes with which dish.

Oscar Amador grew up in Barcelona and came to Las Vegas to cook at Le Cirque. He and Roberto Liendo ran a food truck before they opened EDO Tapas & Wine with the wine man Joe Mikulich, in a Chinatown strip mall on Jones Boulevard.2 Their second room, Anima by EDO, made him a James Beard semifinalist for Outstanding Chef in 2024.6 In November 2025 he closed EDO after seven years and opened this room in the same space with almost no notice. He described the new menu to the Review-Journal as Spanish food, led by memories and technique.

The cooking now leans toward Mexico. Las Vegas Weekly's reviewer, who ate here four times by March 2026, puts it this way: EDO was Spanish with Asian influences as a nod to the neighborhood
