Ito
Ito's 12 counter seats sit inside the Poodle Room, the Fontainebleau's private members' club on the 67th floor.
Why go
Masashi Ito and Kevin Kim opened the first Ito in downtown Manhattan, where MICHELIN recommends it. They opened this second counter with VCR Group on 1 February 2024.2 The club around it is private, but anybody can book one of the 12 seats.2 The meal is an 18-course omakase (a set meal the chef chooses on the night) at $400 a head in May 2026, built on fish flown in daily from Japan.12
Emmy Kasten ate here for The Infatuation in May 2026: Despite the VVIP perch, it’s not stuffy, with a classic hip-hop soundtrack to accompany the 18-course omakase for $400 per person.
Her verdict on the food: This is Japanese fine dining at its best, where you can nerd out on rare delicacies and fancy ingredients that are painstakingly sliced, torched and tweezed to perfection by dedicated chefs who double as dinner party hosts.

One of the best tasting menus and services I have ever experienced.
