The Fat Walrus
The kitchen here runs on residencies, so what you eat depends on who has the smoker. Under Whole Beast, from January 2023, Sam and Alicja Bryant broke whole carcasses down in-house and cooked them on the pub's outdoor smoker and charcoal grill, Wednesday to Sunday. They took a permanent Brixton site in October 2025, so the kitchen is between tenants.
Why go
The pub takes its name from the overstuffed walrus at the nearby Horniman Museum and runs as a single refurbished room with booths, a beer garden and a front terrace. Its kitchen operates on the residency model, and the Whole Beast years set the standard: whole carcasses broken down in-house and cooked over fire, Wednesday to Sunday. The Resident's Zita Whalley called the smoked ox cheek "peaty like whisky" and the room "a good neighbourhood boozer that deserves to be busy." In October 2025 Hot Dinners reported the Bryants had taken a permanent site at 336 Coldharbour Lane in Brixton after six years of pop-ups and residencies, so the Fat Walrus kitchen is in transition.

The kitchen runs on residencies rather than a house chef, which is why the thing to check before you go is who currently holds it: Whole Beast held it and then opened a permanent Brixton restaurant in late 2025. Programme is the right label because the pub is a platform for whoever is cooking, the same mechanism Carousel runs on, and the honest consequence is that a dish named in any review may have left with the last team.

Verdict
could-visit — A proper 2016-vintage free house that spent three years as the home of serious live-fire cooking. The pub itself, garden, taps, booths, holds its rung in New Cross, but the kitchen that earned the save has likely moved to Brixton, so the food case is unproven until the next resident shows their hand.
