Corral de la Morería Gastronómico
In a quiet room inside the flamenco tablao Corral de la Morería, David García cooks a single tasting menu for four tables and no more than eight guests.
Why go
David García, born in Bilbao, cooked at Mugaritz and Nerua and then won a MICHELIN star at Álbora.4 This room has held its own star since 2019.3 In 2025 the MICHELIN inspectors described its single menu as having a strong nod to the chef's Basque origins.

Time Out Madrid wrote in 2025 that García kept three classics when he unveiled a new menu.9 The first is squid cut into noodles and served in a broth of chipirón (baby squid). Danny Salas ate it in 2021 and wrote in El Español: With only two elements we find a dish full of complexity.
4 The second is the pigeon, García's homage to a grandfather who bred pigeons in a village in León. Juanjo Alonso called it sublime, with juicy meat
in 2024.5 Manuel Villanueva had it with almond and palo cortado sherry at the Academia Madrileña de Gastronomía's dinner in June 2026 and called it dark, complex, unforgettable.

in 2018, though impeccably cooked.
7 The third is the intxaursalsa, a Basque walnut dessert. Salas called it possibly one of the best desserts I have ever had in a fine-dining restaurant,
with a texture that disappears in the mouth, turning everything it loses in volume into flavor.

The wine is the other half of the meal. Juanma del Rey, whose family owns the tablao, keeps a cellar of more than 1,200 wines from the Jerez region.2 Alonso reported in 2024 that more than half of the bottles no longer exist,
either because the bodegas that made them have vanished or because the wines were bottled last century.5 The inspectors call it a unique collection of long-lost labels that can be found nowhere else.

The house announced the 2026 menu, Compás, in February 2026: nine courses for 105 euros, with pairings of nine wines at 155 or 255 euros.8 Its list adds grilled cigala (langoustine) with salsa verde and a puchero flamenco, a stew García traces to nights in flamenco artists' homes in Jerez, where the mother or the grandmother makes us a gitano puchero with fennel as one of its ingredients.
