Dabiz Muñoz sends out about twenty courses across four hours, and the drunken Sichuan prawn arrives in palo cortado with blue-crab yangnyeom and hot Joselito mayonnaise.2 It is the only three-star room in Madrid, and the menu is called The Kitchen of the Flying Pigs.1

Why go

Muñoz opened DiverXO in 2007, in a small room on Francisco Medrano, a side street in Tetuán. He had spent the years before that cooking at Hakkasan, Nobu, Nahm and Locanda Locatelli in London.34 The chef who told Madrid he was coming was Abraham García of Viridiana, where the Muñoz family used to eat when he was a boy.4 The third star landed in 2013 and gave the city a three-star room for the first time in twenty years.6 Muñoz told his father he would own a restaurant people queued around the block for, and his father said sure, and pigs might fly.4 The kitchen builds each menu as lienzos, canvases, and the plate is white ceramic so the food reads as paint.6

  • There is one menu and you take it. It ran to nearly twenty courses over about four hours when Alberto Luchini ate it in May 2026. Some arrive with a printed sheet explaining what you are looking at.2

Good to know

  • The room has a lease and an end date. The planned move to La Finca collapsed in June 2024. Muñoz and Minor Hotels extended the lease in February 2025, to the end of 2027.3
  • He has not decided whether there is another one after this. Asked about it by Gastroeconomy in February 2025, he said "todavía no tenemos una respuesta." We still do not have an answer.3
  • The cost, as Luchini read it in May 2026: 450 euros for the food, and pairings at 300, 600 or 900. Metamorfosis costs the same as the menu.2

Verdict

must-visit — The menu runs to about twenty courses over four hours and costs 450 euros, and there is no short version. Book it well ahead and give the evening to it. The alcohol-free pairing, Metamorfosis, costs as much again. Muñoz told Gastroeconomy in 2025 that he does not know whether this room has a successor.
