Why go

Carlos Hormaechea and Pitila Mosquera, a Basque and a Galician, opened the room behind Plaza de Cuzco and named it after their son.1 Gastroeconomy and 50 Best both date that to 1972; El Debate says 1971, and the disagreement is not settled here.42 The son runs it now. The trade has a word for what he does, sachismo, which Gastroeconomy defines as eating well with nothing else attached.1 When Grant Achatz spent five weeks in Madrid moving Alinea over as a pop-up, this is the room he named as his favourite in the city.1 Pilar Salas, writing about where Madrid's offal cooking survived when the casquerías were shutting, names three kitchens, and this is one of them.5

must-visit — Go at lunch on a weekday, book it, and ask what came in rather than reading the card. The tortilla vaga and the falsa lasaña are the two to start with, and the marrow-and-beef course is what to build the meal around. Grant Achatz called this his favourite room in the city, and Time Out asks whether it is every Madrid gourmand's favourite and answers quite possibly.
