Saddle serves its veal shank at the table as a tribute to Santi Santamaría, for 58 euros a person and a minimum of three.
Why go
Saddle opened in autumn 2019 in the rooms that held Jockey.3 The MICHELIN inspectors call Jockey legendary and say the name, English for a riding saddle, nods to it.4 The house says it was created to give back to customers the grand à la carte restaurant, offering full or half portions where one can create their own 4-5 course menu.

Pablo Laya, from Galicia, has run the kitchen since autumn 2024, after Adolfo Santos left.3 The blogger behind Dining With Frankie ate his tasting menu on 28 February 2025. The red-prawn tartare with its coral and garlic had perfect texture and flavor,
and the line-caught hake with lemon pil-pil was cooked perfectly.

Time Out Madrid's 2025 list picked out two of the dishes served at the table: the sole with an extra special meunière sauce,
and the veal shank, a standout recipe worthy of the Michelin star.

Order this / avoid
- Order: the Garrucha red prawn, served raw with almond ajoblanco on the 2026 carta.2 Dining With Frankie (2025) had it as a tartare.5

- Avoid: the rack of lamb if it comes on the same sticky, thick sauce. Dining With Frankie (2025):
The sauce was almost too strong for the lamb, overpowering its subtle flavor.

- Timing: open Monday to Saturday, shut Sunday (MICHELIN, January 2026).4
- Booking: reserve the tasting menu in advance. That booking was non-refundable in 2025. Allow three hours: the Dining With Frankie meal took
about 3 hours even with quick service.

Verdict
should-visit — Book Saddle for the dishes finished at the table and the red prawn, and build your own four or five courses from half portions. The sole alone cost 68 euros a person on the September 2026 carta.
