He came back to work with Luis Arévalo at Kena, and at Nakeima.1 He points that training at a market stall. Peruvian bases go towards Southeast Asia, with leche de tigre, coriander, ají and curry doing the work.1 The menu changes daily with what the stalls around him had.1 You sit in a corridor of the Mercado de Vallehermoso while shoppers buy vegetables past your shoulder and students drink beer at the next stall.2 The house tagline is come y flipa, eat and flip out.4

  • Gastroactitud scored it 6 out of 10 in August 2018, in a critique credited to Fernando Calero, and he printed a warning with it: "Ingredientes como la leche de tigre, el cilantro, las salsas picantes con ají y el curry hacen que las elaboraciones no sean para todos los gustos." Leche de tigre, coriander, ají and curry mean this is not for every palate.1

should-visit — Sixteen high chairs at one table, one menu, and no ordering to do, so the booking is the whole job. The wok mussel ceviche is the plate to hope for. Fernando Calero scored it six out of ten in 2018 and I have not found a review since, so go for the ají and the format rather than on a critic's word.
