Why go

Carnero cooks over a wood grill in an alley of Málaga's old Jewish quarter, and kaleja is the Sephardic word for that alley.2 He trained with Martín Berasategui, Ferran Adrià and Manolo de la Osa, opened La Cosmopolita a few streets away, and kept this room for himself when it opened in 2019.3 MICHELIN gave it a star in the 2023 guide and it holds one in the 2026 guide.2 Guía Repsol has carried it at two Soles since 2022.1

Gazpachuelo, the Málaga soup of fish broth loosened with mayonnaise, and maimones, the bread-and-garlic soup of the province, both go on the tasting menu at full seriousness.1 A red pepper goes into the embers and stays there long enough for the flavor to concentrate.1 The zurrapa, which in most Andalusian kitchens is pork scraps set in lard, comes out of this one as a spread built from the heads of white fish.1

Seven people fit there and everybody else takes the little front room. Expect 130 euros a head before wine. Leave the hare alone.
