Ortiz opened the room with Pepe Rojas, and the two of them came down from Riogordo in the hills behind the city.21 Their son Jose does the buying every morning, most often at the La Caleta de Vélez market east along the coast.1 The room fills every day anyway, up in Ciudad Jardín, nowhere near the centre and looking like the neighbourhood bar it is.1

The prawns come with their addresses attached. Gambas blancas from Málaga, gambas rojas from Garrucha over in Almería with heads worth the work, quisquillas boiled from Motril or La Caleta with their blue roe on them.1 Local bolos, cañaillas, coquinas and conchas finas sit beside Galician percebes and spider crab, because a Málaga counter buys good shellfish wherever it is.1

The wine list is short and it leans on Málaga. Jose pours Telmo Rodríguez's Mountain blanco. The reds worth taking are Cortijo de los Aguilares out of Ronda and Pago del Espino.1
