Head brewer Brendan O'Sullivan has said on the record that the Thornbury site will never be geared toward volume, which is why the tap wall carries wild ales and one-off small batches instead of the same six beers all year.

The brewery launched here in 2003 and The Crafty Pint's news desk calls it Melbourne's oldest independent (The Crafty Pint). It took Champion Beer and Champion Small Brewery at the 2019 Perth Royal Beer Awards, which is a state show rather than a marketing line. Twelve taps pour brewery-fresh beer, wild ales and limited small-batch experiments alongside the core range of Thornbury Lager, Ruckers Hill and Black (3 Ravens). The room itself is an old warehouse once known as the Pleasure Palace, with beer bottles, cans and labels racked in the steel girders overhead (Broadsheet). The brewery has also spent on the plant rather than the room: a 74-kilowatt solar system, a cool roof and a CO2 chiller heat pump that recovers heat from the brewing process, part-funded by $300,000 in federal and Victorian grants.
Order this / avoid
- Order: whatever is pouring off the barrel or wild programme. Thornbury Lager if you want the house beer. A small-batch experiment you cannot buy in a can.
- Avoid: turning up hungry without checking what food truck is on, and turning up at all without confirming hours, because the brewery publishes none.

They have also spent real money on the plant, including a 74-kilowatt solar array and a heat pump that recovers brewing heat, part-funded by $300,000 in government grants. What holds it at could-visit is the venue rather than the beer. The taproom is a low-ceilinged warehouse that has run on rotating food trucks, the newest independent coverage is from 2022, and the brewery publishes no opening hours at all, so you cannot plan around it without asking first.
