should-visit — Worth the walk for what this room argued for and still pours. Mark Dundon sold St ALi in 2008, moved to a Carlton warehouse with Bridget Amor, and started pushing quality, provenance and lighter roasts built for filter and cold drip at a point when Melbourne was running on dark commodity beans made only for espresso. The staff who trained here went on to open Patricia, The Premises and Everyday Coffee, which is a fair measure of how far the influence went. Today it is a hundred-seat room with no bookings, the Golden Gate blend running to cocoa and toffee, a rotating single origin brewed however you ask for it, and a bin you can refill your own container from. Know one thing before you go: the roasting outgrew Carlton in 2017 and the 60-kilo Probat is in Fairfield now. It stops short of must-visit because the case is lineage rather than current judgment. No critic in reach has assessed a cup here, there is no competition placing on this address, and none of the 74 Melbourne chef picks names it.
