The Elysian Whisky Bar
Lagavulin normally sells its 16-year-old as a blend of barrels. This bar stocks the limited eight-year-old five times over, each bottling drawn from one barrel, so you can taste the difference blending is designed to remove.
Why go
Kelvin Low and Yao Wong both came out of Whisky & Alement and opened this on Brunswick Street just before Christmas 2016. The room is built on the whisky bars of Japan: leather seating, low tables, jazz, and most of the floor given over to a long Californian redwood bar. The shelf behind it started at about 280 bottles and has grown to around 350. Almost nothing on it is a standard release. Low told Broadsheet that many are single barrels and one-off releases that will never be sold again, and that some were in such short supply the pair were limited to a single bottle or had to win the right to buy through a lottery. The independents on the shelf include The Whisky Agency, Sansibar, Acorn, Three Rivers, Signatory and Eiling Lim.
Order this / avoid
- Order: a single cask, chosen by whoever is behind the bar. If the Lagavulin eight-year-old bottlings are still there, take two of them side by side. Cheese and charcuterie alongside.
- Avoid: asking for something you already drink at home. That is the one thing this shelf is not stocked for. And eat before you come, because there is no kitchen.

The Elysian isn't just any old whisky slinger either, it's a shrine to the distilled amber liquid. With a 350-strong backbar, every bottle is either rare, interesting or an independently bottled whisky, hand-picked by Wong and Low. No big-name whisky brands here, mate.

That is the argument for the whole room. They came out of Whisky & Alement and opened this on Brunswick Street just before Christmas 2016, modelled on the whisky bars of Japan: leather, low tables, jazz and a long Californian redwood bar. The shelf runs to about 350 bottles and Cordelia Williamson's line for Concrete Playground is the right one, no big-name whisky brands here. Some of them were rationed one per buyer or allocated by lottery. The Australian trade made it a Whisky Bar of the Year finalist in July 2026. There is no kitchen, so eat first and let the bar choose for you.
