Taquería El Califa de León
They sear the gaonera on a plancha with lard, salt and lime, and press the tortilla beside you. The menu runs to four items, nobody sits down, and it trades until two in the morning.
Why go
This counter has been trading in San Rafael for more than seventy years.2 In 2024 it became the first taqueria anywhere to hold a MICHELIN Star, and in the selection revealed on 20 May 2026 it does not hold one.3 The four items and the plancha are what they were. The menu is four items: bistec, chuleta, costilla and the gaonera.2 Meat goes on the plancha with lard, coarse salt and a squeeze of lime, and that is the whole seasoning.2 The masa is hand mixed with water beside you and run through the tortilla machine to order, and the tortillas come out a touch bigger than the city norm.2 The room is a griddle, a tortilla press, a refrigerator and a short counter, and it holds a handful of people at a time.2
Order this / avoid
- Order: the gaonera. The 2024 Inspectors called it
a skillfully prepared ribeye even more tender than the bistec and served on a thin yellow corn tortilla
; the guide's current page describes it as thinly sliced beef filet, seared to order. Both readings are the same publisher two years apart, so take your pick and eat it either way.2 - Order: the costilla second. It is timed to land as you finish the first plate.2
- Avoid: coming for a sit-down. There are no tables and no seats, only a metal shelf to balance the plate on.2
What locals & experts say
- The MICHELIN Inspectors, on why they starred it in 2024:
It's about the meat and tortilla without any fuss or garnish to dress it up or hide behind.
On the discipline that keeps it steady:Their technical ability shines, and since they only have four options on the menu, it allows them to maintain their standards throughout.
On the costilla:This thin slice of beef was incredibly flavorful and so tender. The chef had my first two ready right away and timed it perfectly to hand me this just as I had finished my first plate.
These are anonymous Inspector notes rather than a signed review, and they are the only outside voice on this food here.2
Good to know
- The star is gone and the taqueria is not. The 2026 selection names 27 One Stars and this is not one of them, and the guide still lists the restaurant, tagged

Verdict
should-visit — Four items, one plancha, seventy years, and a star that came in 2024 and went in 2026. The loss is recorded here because it is verified three ways, and it says nothing about the cooking: the Inspectors set out in detail why they gave it, and nothing published since says the meat or the masa changed. What is missing is anyone else's opinion. No signed critic has written this counter in anything read for this entry, so the case rests entirely on an anonymous body that has now changed its mind once. Go for the gaonera, go late, and expect to stand.
