Palmaz Vineyards
A private walk through a multi-level underground cave, then a seated salon where a house chef sends a plate against each wine. $150, two hours.
Why go
Nothing here happens at a bar. A guide takes your group through the multi-level underground winery cave first, and only then do you sit down in a private tasting salon with an estate ambassador pouring and an in-house chef's hors d'oeuvre against each glass.1 The two flights are a real fork. The Portfolio at $150 runs the range, Louise Riesling and Amalia Chardonnay, then Brasas and current-vintage and library Cabernet, finishing on the Florencia Muscat.1 The Cabernet Collector at $195 is five Cabernets and nothing else, including Gaston and two Select library releases.1 Allow two hours, and note that the whole party takes the same tasting.1
Order this / avoid
- Order: the Collector if you came for Cabernet. Two of its five are Select library releases; the Portfolio's one library pour is the plain Cabernet release.1
- Order: the Portfolio if the table is mixed. It is the only one with white wine and the Muscat in it.1
- Avoid: planning to split the group. The winery says every guest takes the same tasting, and above twelve people you have to call for pricing.1
What locals & experts say
- Palmaz Vineyards, on how a visit runs:
Join us for a private guided tour through our multi-level underground winery cave. Guests will then enjoy a seated wine tasting in a private tasting salon hosted by an estate ambassador. Each wine will be paired with a light hors d'oeuvre specially curated by our in-house Chef.
1 - The same page, on the terms:
This private experience is $150 per person, and all guests in the group must enjoy the same tasting.

Both are the winery on itself. I read nobody outside it on these wines, so I have no outside call for you.
Good to know
- Booking: first-time visitors go through a reservation request form; existing clients and members call 707-226-5587. No opening days or hours are published.1
- The winery's own story page is broken. It returns a server 404, so who built this and when is not established here.
- Hygiene: not established. I have no inspection record for this county.
Verdict
could-visit — You walk a multi-level underground cave before anybody pours, then sit in a private salon while a house chef sends a plate against each wine, and that structure is what the $150 buys rather than a view. The two flights are a real choice and the winery prints both by name: the Portfolio runs Louise Riesling through Amalia Chardonnay and three Cabernets to a Florencia Muscat, while the Collector is five Cabernets including Gaston and two Select library releases. Everyone in your party has to take the same one, and above twelve you call. The rung sits here because nothing on the record tells me who built this or why, since the winery's own story page 404s, and because nobody outside the estate was read on the wine.
