Why go

Nobody orders. Ruth Reichl described it in March 2024 as a room with effectively no menu, where the waiters work out what each table wants and every table eats something different.2 The meal opens on a procession of what came out of the ground that day, radishes under browned butter, Hakurei turnips dressed with poppy seeds, morsels of dried honeypatch squash.1 A heavier course may be roasted retired dairy cow under root-to-leaf celeriac. The meal closes on the dairy the farm began as, a tower of milk crumbs, milk jam, panna cotta and ice cream over poached quince.1 Reichl's advice is to walk the fields before you sit down, and her examples from her own visit were a just-picked roasted potato, bread from wheat Barber grows, and two butters from cows grazed on different grasses served side by side.2

The Rockefeller family built this. Barber's account is that they wanted their old dairy farm kept out of the hands of 52 housing lots about twenty-five years ago, so they set up a not-for-profit with the restaurant as the for-profit that pays into it, and he cooks for around 55 guests a night on the land it saved.3

  • Order: nothing, and that is the format. The kitchen and the floor decide what your table eats.2
  • Avoid: squeezing it into a city evening. It is up in Tarrytown, and Reichl budgets four hours at the table.2
  • Avoid: the full tasting menu if the money is the obstacle. Mike Wasserman's route on to the same farm is the cafeteria lunch or one of the preset family-style meals, both booked ahead.5
