Mario Carbone's baked clams come three ways, and his own version carries a dollop of sweet uni on every shell.

Why go

Willa Moore rated it 8.2 for The Infatuation, and the pasta is not what she rates it for. What the room does better than the pasta is theater with real cooking under it. Every meal opens on a free spread. Breads, cured meats, pickled cauliflower, and warm mozzarella cut into four at your table. Moore calls that a hack if you are managing the bill. A purple-suited server hands over an oversized menu and introduces himself as your captain. Dessert carts move. Parmesan lands on your plate off the tip of a very large knife.

The clams are where the cooking outruns the theater. Oreganata, a version under a thin layer of lardo, and Mario Carbone's own with uni.

Lunch on a weekday is Moore's recommendation and she means it. The curtains are pulled back. Nobody hurries you. She has heard you might walk in at that hour and would not try it at dinner. For the more interesting cooking she sends people to Torrisi in Nolita, from the same group, and Matthew Schneier agrees from the other end: Torrisi has all the service but less of the staginess of Carbone.3

Writing about Bungalow in August 2024, Priya Krishna checked availability on a Friday and found she could have booked four people here within a few weeks.4

Order this / avoid

  • Order: the baked clams, all three, and the salmon crudo with shaved fennel and lemon zest. Then the spicy rigatoni vodka and the ravioli al ragu, filled with very soft ricotta, which the spicy rigatoni chatter drowns out every time.
  • Order: the chopped salad over the caesar. It is dressed properly and finished with crispy mushrooms, and it needs no tableside performance.
  • Avoid: Mario's meatballs, which run dense, and the $89 veal parm unless you came to spend. Avoid the Patio if you are offered it.

Verdict

should-visit — Do not take the last seating if the tableside caesar is what you came for. Moore turned up near midnight and it arrived without the performance, and she guessed the caesar-maker had gone home.
