Chef Will Teague makes the charcuterie in house.4 Florence Fabricant counted about ten house salami coming out of the salumi bar Jake Dickson opened in 2022, in flavors like tres chiles, cacio e pepe, and pistachio and orange peel.1
Why go
The shop is a butcher counter with a kitchen and a salumi bar attached, on the lower level of Chelsea Market. Dickson states the sourcing rule plainly: no added hormones, no prophylactic antibiotics, no animal by-products, and nothing off a feedlot.3 The kitchen runs off the same counter, which is where the hot dog comes from.
Order this / avoid
- Order: the hot dog. The shop calls it
New York's BEST hot dog
and it is house-made from the same meat in the case.2 That claim is theirs. - Order: a board at the salumi bar with a beer or a glass of wine. Happy hour runs weekday afternoons.2
- Order: jerky to take away. Fabricant names za'atar, honey and anise, and ghost pepper.1
- Avoid: the Ninth Avenue entrance at peak. The shop points you at its own side door on West 15th Street to skip the market crowd.2

Verdict
could-visit — Use the shop's own side door on West 15th Street rather than fighting through Chelsea Market. Jeff has it down for the hot dog, and I haven't found anyone outside the shop who has written that hot dog up. Nobody books.
