Why go
Daniel Humm took animal products off this menu in 2021 and put some of them back. Dinner runs nine courses at $365, and three of the nine can be swapped for meat or fish.2 Kim ate both routes and rates the meat dishes technically better and less interesting, so a poached lobster arrives where the kitchen used to take a risk.2 What he does rate is the room. Crumbs are swept between courses, the cellar is deep enough to spend an evening in Burgundy, and the bar upstairs pours a Negroni colada.2 The MICHELIN inspector's write-up still describes the plant-based menu, and singles out a laminated vegan roll with faux butter and a quenelle of tonburi standing in for caviar.1
