Saori Kawano's showroom on Warren Street sells Japanese knives and sharpens them, and the sharpening currently runs six to seven days.2 Vincent Lau does the work, in the seat the master sharpener Chiharu Sugai held until 2018.1

Verdict
could-visit — Korin sells goods rather than meals, so the reason to go is a knife or a sharpening. Bring the knife in and collect it the following week. Jeff has it on his list as a knife shop, and I haven't found anyone outside Korin writing about it.
