Why go
The counter opened inside Mifune on East 44th Street. Alyson Penn put it in Time Out's survey of the 2017 omakase wave, at the same $250 it charges now.31 It lists a MICHELIN star in every guide from 2018 to 2024 on its own page.1 Melissa McCart's Eater map has it among six New York rooms the guide dropped in the 2025 selection. The city went from fifty-five one-starred restaurants to fifty-two that year.2
Everyone eats the same card at Sushi Amane. The kitchen will not build around a gluten allergy, a vegetarian or a request to hold the rice.1 I have not found anyone who has eaten here and written about it.
