The wood-fired oven cooks, and then its ash goes back into the pot to nixtamalize the corn for the masa.
Why go
Dominica Rice-Cisneros ran Cosecha Café for ten years before this, and she built Bombera as the full-service version of it: a bar, a longer menu, and more made by hand.5 The MICHELIN inspector on the room: Fire provides the central motif for this boisterous community staple, from the venue itself (a former fire station) to the name (Spanish for fire woman), all the way to a crackling wood-fired oven that not only animates the kitchen, but also provides ash used to nixtamalize corn for house-made masa.

Rice-Cisneros worries that the Dimond District reads her prices wrong. She told Luke Tsai at KQED that her neighbours are Peet's baristas, pizza-slingers at Cybelle's and grocery-baggers at Farmer Joe's, and that many of them have never come in: There's a shyness around it.
Her own answer to it is a quesadilla, an horchata and about twenty dollars.6
Order this / avoid
- Order: the duck leg confit. The inspector calls it the single best illustration of the place: rendered duck with a nutty mole verde, black beans and handmade blue corn tortillas.1
- Order: the roasted carrots. Hernandez and Ho, in 2023:
Roasted carrots ($13) over creamy beans topped with rich, smoky almond misantla is inventive, comforting and all-around sensational.
The carrots come from Riverdog Farm.45 - Order: the chicken mole tamales, and watch how they come. The mole goes on the side so the sauce does not dry out in the steamer.4
- Order: the carne asada huarache supreme, filet mignon and crisped Oaxacan cheese on an heirloom blue corn tortilla, which Tovin Lapan picks off the current menu for Nosh.7
- Order: the smoked trout tostadas. KQED names them a signature of the house.6
- Avoid: treating the vegetable plates as sides. The charred beets a la Tulum come with lime, green chile, whipped pumpkin and sesame seed butter, and in winter the butternut squash arrives under black mole with toasted pecans and swiss chard.57

- MICHELIN gave it a Bib Gourmand on the 2026 California list, and the inspector credits Rice-Cisneros with
combining a locavore pedigree and fine dining chops with a respect for the generational knowledge of heritage cooking.

Good to know
- Book a month out. Reservations open one month ahead and a handful of seats are held back for walk-ins.6
- The duck carnitas use Liberty Ducks.5
- Ask for the patio if the weather holds. Lapan finds the outdoor tables and the tall room equally lively.7
- Rice-Cisneros opened Cosecha Café in Swan's Market in 2010 and was a James Beard semifinalist for Best Chef, California in 2019. She closed Cosecha in 2021 and opened this room the same year.7
Verdict
must-visit — Ash out of the oven goes back into the corn, which is a loop most kitchens would not bother closing. Taste a tortilla on its own before anything goes on it, then the duck confit and two of the vegetable plates.
