Delphine Zampetti, who came from Le Verre Volé, opened Chez Aline as a takeaway counter in an old horse butcher's on rue de la Roquette (L'Hôtellerie Restauration). When she left for the Basque Country, her former sous-chef Tiphaine Moindrot, who came from Le Dauphin, took over. Le Fooding reported the change in September 2022 (Le Fooding). Besse gave the counter five stars out of five in April 2023 and summed up the handover: A change that keeps everything the same, because nothing has really changed. (Time Out)

The chefs who sent people here ate in Zampetti's time. Bertrand Grébaut of Septime told FED Guides in 2015 that her Spanish tortilla tasted better than any other I've ever had (FED Guides).
