Bonnet spent six years cooking at the Greenhouse in London's Mayfair and worked at Le Sergent Recruteur in Paris and for Michel Bras in Laguiole.87 In 2016 he opened his own room opposite the Ferrandi school and named it for the chaffinch, quinsou in Occitan.
