Bertrand Grébaut and Théophile Pourriat opened Tapisserie on rue de Charonne in 2021 partly because diners at their Clamato kept asking to buy its maple-syrup tart to take home.1

Why go

Grébaut and Pourriat already ran Septime and Clamato, their seafood restaurant, on the same block. Grébaut told David Lebovitz in 2021 that the two had both become parents and were more tuned in to sweets.1 Grébaut died in July 2026, at forty-four.7 Fanny Payre, who had worked at Septime and at D'Une Île, their inn in Normandy, was the pastry chef when the shop opened. Time Out's April 2026 list of the best bakeries in Paris put Tapisserie first and named her as chef.12

Come for the chou à la flouve (a cream puff), filled with cream infused with flouve, a grass that Lebovitz found scented like hay. He wrote in 2021: I don't think I'll ever tire of the earthiness of the hay flavor, especially when it's as spot-on as it is in the creamy choux puffs at Tapisserie.1 Le Fooding's critic in January 2022 described an ultra-silky cream infused with hay, which has caused more than one customer's knees to buckle in delight (€2 each).3 The maple tart from Clamato, known there as La Clamatarte, was a wonder of maple syrup caramel, crispy pâté sucrée, and crème chantilly to Lebovitz in 2021.1
