Armando al Pantheon
The third Gargioli generation stews the coda alla vaccinara down with celery and tomato.
Why go
Fabiana Gargioli is the sommelier, and MICHELIN's Rome trattoria list says she pairs with a preference for organic labels (MICHELIN Guide). The menu runs the quinto quarto, the offal end of Roman butchery, so coratella d'abbacchio and veal intestines sit next to the fresh anchovies and the sour-cherry tart (MICHELIN Guide Italy). Sarah Cicolini sends people here for weekday lunch, into a room she says the government buildings around it fill with politicians. Asia Palomba counts fourteen tables under wood-panelled walls and exposed beams (MICHELIN Guide).
Order this / avoid
- Book: a month ahead. Katie Parla:
Both have online bookings that go live a month out.
She sells paid walking tours in Rome.5 - Order: the coda alla vaccinara. Cicolini calls it the standout,
a classic Roman oxtail stew... slow-cooked with plenty of celery and tomatoes
.9 Then the coratella d'abbacchio if the spring lamb is on, and the sour-cherry tart.7 - Avoid: ordering a full plate of pasta if you want a second course. The Infatuation says half portions are available.
What locals & experts say
- Dissapore (2015), on the price:
There is no unanimity on Armando, because okay, okay, it is dearer than the classic Roman trattorias. So you tell me why you have to book it so far ahead.
3 - The Infatuation (Annie Replogle):
Come here for simple and excellent Roman food, including fantastic amatriciana made with rigatoni and a sublime spaghetti alla carbonara.
4 - Sarah Cicolini, chef-owner of Santo Palato (The Relisher, 2025):
with its prime location right in front of the Pantheon, is one of the best restaurants for lunch during the weekdays. This historic, family-run restaurant has been around for generations and is now run by the third generation.
9 - MICHELIN Guide Italy (selection, 2026):
This small restaurant just a few metres from the Pantheon has been run by the Gargioli family since 1961, with the third generation now at the helm.

Verdict
must-visit — Fourteen tables, one family since 1961, and William Moran cooks the kitchen. Dissapore put the amatriciana first in Rome and answered its own objection about the price by pointing at how far ahead you have to book. Gambero Rosso printed the carbonara down to the cubeb pepper it toasts and crumbles. Sarah Cicolini sends people here for weekday lunch, and it is one of Jeff's saves. Online bookings open a month out and that is the only hard part.
