Copper Common
Copper Common's CC Burger is a thin patty of local beef and steak trim, cooked au poivre and topped with aged Noord Hollander gouda and pickled onion.
Why go
Ryan and Colleen Lowder, who own The Copper Onion on the same block, opened Copper Common on Broadway in 2014 and rebuilt it in 2022 (Imbibe, Gastronomic SLC). Ryan Lowder modeled it on Maison Premiere, the Williamsburg bar famous for its cocktails and its oyster happy hours (Salt Lake Magazine). Sean Neves, who owns the cocktail bar Water Witch, told Imbibe in 2024: Copper Common has a really aggressive and well-thought-out natural wine menu, plus a great selection of creative riffs on cocktails, and some of the best bar food in the country
(Imbibe). Salt Lake Magazine's panel put it on its list of the city's best restaurants in 2025 and again in 2026.
Order food with the drinks. Lowder told Ted Scheffler of Utah Stories what he wanted from the burger: We set out to do a very simple, proper burger where the meat couldn't hide.
Scheffler ate it at the 2022 reopening and wrote, Simply put, this is the best burger I've ever eaten
(Utah Stories). Alex Springer of City Weekly came back in 2024 for the crab beignets, fried like hush puppies with pecorino and set on a buttermilk dressing. He found the crab subtle and still wrote that each beignet is a fantastic little pop of flavor and texture.
His judgment on the whole kitchen: The menu selections aren't terribly flashy, which is a flex in and of itself

When the bar reopened in 2022, every wine on the list was natural, much of it orange and skin-contact from Italy, France and Spain (Utah Stories). Lowder explained why to Stuart Melling in 2022: think organic food circa 2000, why would you want all that crap in your glass?
(Gastronomic SLC). Expect some of it to look cloudy. Avrey Evans of Salt Lake Magazine wrote in September 2026 that guests who have not had a pét-nat (pétillant naturel, naturally sparkling
) before complain this wine must have gone bad; it's hazy!
She gives the bartenders New York standards of finesse,
and wrote that their $8 Monday craft cocktail specials challenge the status quo that a good drink must cost $25
(Salt Lake Magazine).
