Birdsong
Christopher Bleidorn owns Birdsong and cooks it over live fire, and the room holds Two MICHELIN Stars in the 2026 California selection. The kitchen hangs bundles of drying herbs across the Mission Street space. Dinner is one fixed tasting menu.
Why go
Bleidorn runs a fire kitchen with a light hand, which is the harder half of that job. Creek trout arrives as roe under a kelp kombucha sabayon. Black cod goes over the embers. Cornbread comes out under a thick layer of caviar. The dessert the inspector describes is blueberries and creme fraiche hidden under lemon mochi and a bee-pollen tuile.
Order this / avoid
- Order: the lacquered quail. It comes with grilled Parker House rolls and crunchy pickles, and you build it at the table the way you would a Peking duck.1
- Order: the tail end lox, served on its own crispy skin.1
- Order: whatever the root broth is doing that night. Eater found it with braised wakame.2

Verdict
should-visit — The floor here is friendly and unfussy, which is worth knowing before you spend this much. Go with somebody who eats everything.
