The Rebel Within is a soft-boiled egg baked inside a savory sausage-studded cake. It comes with a small vial of Tabasco. Max Child reviewed this Valencia shop for The Infatuation in January 2022 and gave it 8.1.
Why go
The trick is the egg staying gooey through the bake. Max Child says you will buy it to cut it in half and photograph it. Child's warning is the useful part. He reports that the egg has often been sitting and gone cold, and says to ask for it heated.1
Child does not think it is the best thing in the case. Dianne de Guzman and Becky Duffett point at an alfajores kouign amann. It is layered with dulce de leche ganache and topped with a small alfajores macaron.2
I have not found a source that names who founded the shop.
