“Nite, the owner of Lunette is, I believe, the only female Cambodian restaurant owner in the area and she has been a huge force in introducing Cambodian cuisine to us. The pork noodle soup has so many flavors that it reveals to you as you eat it. She also has this cabbage salad. It looks like any slaw with some chicken in it, but every bite reveals fermentation, funkiness, acid, sugar, with herbs and fried shallots.”
